Biography
I am currently engaged in research work at the National Center of Meat Quality and Safety Control of Nanjing Agricultural University and engaged in food research for 7 years long. My major is meat science, including thermal processing and quality control of meat. I am very good at researching meat nutrition and safety. For instance, antioxidant peptide, storage and preservation of meat, advanced glycation end products (AGEs), heterocyclic amine, polycyclic aromatic hydrocarbon, etc.
